Note: You need a pan with an edge to catch juices as they are released so you can’t use a pizza stone for this. A cookie sheet is too big so look for a circular pan/dish.
1 lb lean ground bison (or lean ground beef) (I recommend organic, no hormone, no antibiotic no steroid grass fed).
1 lb lean ground turkey (organic if you can)
1 egg (organic, cage free)
1TBSP granulated garlic
1 TBSP granulated onion
1 tsp sea salt, plus extra for zucchini
1/2 tsp black pepper, plus extra for zucchini
1 TBSP olive oil
2 Medium zucchini, spiralized (or grated if you don’t have a spiralizer)
1 1/2 12 oz jars of high quality prepared pizza sauce (no added sugar-found DelGrosso at Sprouts) (If you are using a circular pan 1 jar might be enough but on the cookie sheet I needed more)
1- 1 1/2 cup of sliced Crimini mushrooms
1 1/2 to 2 cups of shredded mozzarella (depends on how cheesy you like it and what type of pan you are using) (organic, pasteurized if available
1/4 cup finely chopped fresh herbs like basil, oregano, flat parsley or a combination of them
Preheat Oven to 450 degree F. In large bowl, combine, meats, egg and granulated garlic and onion, 1 tsp salt and 1/2 tsp pepper. Mix gently but thoroughly too just combine ingredients. Do not overwork meat.
Transfer mixture to 16 inch pizza pan or circular dish. Gently press meat into the pan about 1/2 inch thick (it will shrink by an inch or two in diameter while cooking).
Slide pan into oven and bake 10 minutes. Remove from oven, drain extra juices and set aside to rest. Slide oven rack into broiler position and rest oven to broil.
While crust is cooking, heat olive oil in large sauté pan over medium heat. Add zucchini and season to taste with salt and pepper. Sauté a few minutes until zucchini reaches desired tenderness and has released most of its liquid. Drain the liquid and set aside. In another pan with a little olive oil and some water sauté/steam them until softened.
Top crust evenly with pizza sauce and arrange sautéed zucchini and mushrooms over the sauce. Top with cheese and broil for a few minutes until cheese is melted and all ingredients are hot. Top with fresh herbs.
